Sousón monovarietal, a variety historically cultivated in Condado do Tea area, under the name of Retinto. It is a long-cycled variety, small bunch and medium-low productivity. It has potential to be one of the greatest grapes in Galicia. Wines produced with Sousón are very aromatic, deep coloured and fresh.
Manual harvest in 20-Kg crates. Total stalking and cold prefermentative maceration. Slow fermentation at 22ºC and malolactic fermentation in Allier French-oak barriques where it stays for 6 months with constant batonnages of its lees. Natural clarification and stabilisation. It may occur a slight precipitation of sediments in the bottle.
Intense red colour, almost dark, with violet rims. It shows high aromatic intensity, prevailing wild red berry fruits as blackberries, floral hints, toasted aromas, Indian ink, Athlantic herbs, laurel and an elegant minerality.
In the mouth it is a wine full of freshness and fruitiness, with mineral and saline
sensations, very Athlantic.
Perfect with fresh Galician cheeses, octopus, fish, rice and White meat.
Best enjoyed at fresh temperature, 12-16ºC.
