This wine is only produced in exceptional quality years, when the climatic conditions are optimal to obtain grapes mature enough for a long-lasting ageing process.
Hand picked. Cold maceration for 6 hours at 10ºC (50ºF). Lightly pressed to obtain the must (pulp). Controlled fermentation in stainless steel tanks at 16ºC (60.8ºF). Afterwards, the wine matures for three months with its own lees. During more two years, these are renewed with lees of the next crop so that the wine can acquire structure and aroma.
Brilliant straw yellow hue with lustrous green sparkles. Intensely aromatic, and at the same time complex and pleasant, mature white fruit, floral, hints of laurel, citrus similar to the grapefruit and a mineral background. A real twist of sensations. While the wine is oxygenated in the mouth, the aromatic sensations perfume the palate with fruit, laurel and citrus. Vibrant bitterness that provides freshness, flavor and a persistence that can only be attributed to the best albariños.
Baked fish or cooked in sauces, seafood, fresh semi-cured cheeses, foie, white meats. Suggested consumption at 12ºC.
